3 cups tofu
1 cup white sugar
1/4 cup fresh lemon juice
1/2 cup vegetable oil
1 tsp vanilla
pinch of salt
Put liquids in blender, then tofu. Blend until creamy.
For the crust, mix together 1 and 1/2 cups of graham cracker crumbs with 1/4 cup melted margarine. Press into pie plate and pour the tofu mixture into it.
Bake at 325 ° for 5o minutes. Let cool. Dress up with fresh fruit, a fruit sauce, or dark chocolate shavings.
Love this recipe!!I have been making this for years. Non veggies love it too! Adding some pineapple chunks in the cake mix is nice for a mix up. For fruit sauce topping I like to mix frozen or fresh berries in a blender with a little maple syrup.
